Rome’s region has been historically linked with
whites wines, which account for more than 90 percent
of production. Frascati leads the list of the Castelli
Romani, the range of spent volcanoes southeast of the
capital, whose vineyards also yield Marino, Montecompatri
Colonna and to the south Colli Albani, Colli Lanuvini
and Velletri.
The legendary Est! Est!! Est!!! di Montefiascone
comes from the crater lake of Bolsena in the northern
part of Latium, near where the vineyards of Orvieto extend
from the Classico zone of Umbria. Latium’s white
wines, based on varieties of Malvasia and Trebbiano,
were traditionally soft and round (abboccato) and well
suited to the spicy cooking of Rome. But modern white
wines tend towards dry, fruity and zesty, designed to
appeal to international tastes.
In recent times, red
wines have emerged in Latium’s hills to challenge
the supremacy of the whites. Still, despite growing prestige,
red wines represent a distinct minority that are so far
more likely to be covered by the regionwide Lazio IGT
than by a specific D.O.C.
