The
classification of Italian wines, in the past ten years,
has developed a pyramidal configuration, characterised
by three factors of major significance.
The
primary grape of Chianti was, and still is, the Sangiovese,
which gives the wine its characteristic plumminess and
edge, along with the red Canaiolo, which was used to soften
the Sangiovese.
