Description
What kind of wine is it
Amarone della Valpolicella Classico produced by Tommasi is a structured red wine, obtained from Corvina Veronese, Corvinone, Rondinella, and Oseleta grapes. Its character is defined by a precise drying process, which gives the wine an intense profile and a distinctive velvety texture. Aging in Slavonian oak barrels enhances its aromatic and taste complexity. This is a faithful expression of the Veneto region, characterized by good complexity and clear fruity aromas.
Where it comes from
This wine originates from the La Groletta and Conca d’Oro vineyards, nestled on the hills of Sant’Ambrogio. We are in the heart of Valpolicella Classica, where viticulture is expressed through a clear and defined territorial identity. The exposure of the hill vineyards gives the fruit distinctive intensity and provides ideal conditions for the drying technique that defines the style of this historic and renowned production area in Veneto.
How it is produced
The Corvina Veronese, Corvinone, Rondinella, and Oseleta grapes are harvested in October and immediately placed on special racks. The bunches rest in large drying rooms for three months, where they undergo a slow drying process that naturally concentrates aromatic and sugar components. Afterwards, the maturation continues in Slavonian oak barrels at controlled temperature until bottling. This process preserves the richness of the dried grapes and imparts a smooth texture.
Tasting notes
In the glass, it shows an intense ruby red color with deep purple highlights. The bouquet is distinguished by cleanliness and finesse, while it unfolds clear aromas of ripe cherries and plums. On the palate, it is full, complex, and velvety, supported by a solid body that fills the mouth consistently. The tasting progression is aligned with the nose and ends with persistent and enveloping aromas of dried grapes. Each sip combines high aromatic intensity with a continuous and satisfying roundness.
Food pairings
The fullness and softness of this red make it the ideal companion for red meat and game dishes. It pairs naturally with intensely flavored preparations, supporting long cooking thanks to its dense velvety texture. It also offers great balance with matured cheeses, where the fruity aromas counterbalance the savory notes of the dish. In a regional context, it honors the Venetian gastronomic tradition and finds great expression in Amarone-braised beef, enhancing its concentration.
When to serve it
It is ideal for occasions that call for a full-bodied red wine, capable of accompanying complex meat dinners or cheese selections. The texture derived from the drying process and the subsequent rest in wood give it a good capacity to age in the bottle. It shows an interesting aging potential, developing more evolved aromas over the medium term. It can be appreciated from the moment it is opened for its immediate structure, offering an enveloping and complex profile perfect for convivial moments.
