Description

What kind of wine it is

Amarone della Valpolicella Niviana is born from a careful selection of Corvina Veronese, Corvinone, Rondinella and Molinara grapes. This blend displays a deep aromatic profile and a velvety tasting texture. Fermentation and the subsequent ageing in wood are key steps in defining the richness of the sip. The final result is a structured red that perfectly marries power with absolute elegance.

Origin

The grapes used for this wine come from the renowned Valpolicella area. The vineyards sink their roots into soils characterized by the presence of white or white-pinkish marl limestones, a geological element that distinctly influences the aromatic profile. This specific soil framework imparts a precise flavor imprint and firmly connects the wine to its land. The rigorous selection of the bunches shapes the identity of the product.

How it is produced

Production begins with a meticulous manual harvest to ensure that only the best fruit reaches the winery. After fermentation, the process continues with extensive ageing. The 36 months of barrel ageing are essential for aromatic development. This prolonged wood maturation fully develops the structure and complexity necessary to define the character of this red.

Tasting notes

In the glass, it reveals itself with an intense garnet red color, consistent with the long ageing period. On the nose, it is ethereal and offers clear nuances of spirit-soaked black cherry composing a persistent bouquet. On the palate, it expresses marked robustness, enveloped by a pleasant velvety texture that balances the strong flavor intensity. The progression leads the sip towards a harmonious and deeply integrated finish.

Food pairings

This red is ideal to enhance game dishes and important roasts. It pairs perfectly with the flavors of traditional Venetian cuisine, masterfully complementing classic pastissada de caval and the tasty bigoli al ragù d’anatra. At the table, its structured body easily supports the succulence of slow-cooked meats and rich sauces, creating a thoroughly satisfying and coherent tasting experience.

When to serve it

Its structured core makes it the star of important lunches and dinners, especially alongside hearty recipes. The long wood ageing offers an intense and balanced drink, suitable for occasions when wine needs to support the richness of the dishes. Its warm and mature notes are best appreciated in convivial tasting moments, where its persistent finish comes to the fore.
