What kind of wine is it?

Barbaresco di Sabaudo is a red wine made exclusively from Nebbiolo grapes, designed to faithfully reflect the unique characteristics of its territory. Its style is refined and wonderfully structured, supported by careful vinification in steel and targeted aging in wooden barrels. The winery's choices set up a persistent and layered sip, ideal for accompanying substantial dishes and enhancing a table with character.

Where does it come from?

The grapes come from four different communes located within the designated area of the Barbaresco denomination. This territorial selection allows for recognizable nuances and a profile in line with the elegance of this renowned Piedmont wine. The label is adorned with a historic portrait of Pio IX, pope from 1846 to 1878. Initially a reformer and later an opponent of Italian unification, he faced the loss of temporal power following the Capture of Rome in 1870, an event that adds a profound narrative value to the visual identity of the bottle.

How is it made?

The process begins with careful destemming and crushing, followed by fermentation in stainless steel tanks at controlled temperatures between 28 and 30 °C. Maceration with the skins lasts for twelve days and is accompanied by daily remontage to optimize color and tannin extraction. Malolactic fermentation is completed in full to ensure greater stability. This is followed by total aging of at least twenty-six months, including nine months in wooden barrels, to perfectly integrate the tannic component.

Tasting notes

In the glass, it shows a solid and clean appearance, consistent with its long aging period. The bouquet opens with an enchanting ethereal aroma, clearly defined by distinct balsamic notes that enrich the aromatic spectrum. On the palate it is elegant and persistent, offering the typical complexity of the grape variety. The tasting finishes with confirmation of an excellent structure, marked by a well-balanced and profound harmony between all its elements.
