Champagne Eurêka! by Chavost is a Brut Nature made from Chardonnay and Meunier grapes. This sparkling wine maintains an extremely dry and precise style; the winemaking process aims to enhance the freshness and aromatic clarity of the fruit and excludes the use of any sugar dosage. The artisanal approach in the cellar reflects a philosophy focused on purity and authentic expressiveness of the raw material, resulting in a taut and linear glass.
Origin
The grapes come from the vineyards of Chavot-Courcourt, located in the heart of the Champagne region. This area is deeply connected to the ancestral name Chavost, an ancient historic village nestled between the church of Saint-Martin and the Mont-Félix hill. The vines sink their roots into a clay-limestone terroir characterized by a peculiar northern exposure. This geographical and geological combination is essential to support the gustatory tension and the natural aromatic finesse that distinguish the house style.
Production
The process begins with the extraction of the free-run must, known as cuvée, obtained from the very first pressing. Champagne is crafted according to the Méthode Champenoise, with spontaneous alcoholic fermentation started solely by indigenous yeasts. The subsequent bottle fermentation also occurs completely naturally, with no sugar added, in full accordance with the Brut Nature profile. The absence of invasive oenological treatments and a vinification process without additives preserve the wine’s intrinsic tasting qualities.

On appearance, the wine displays a naturally lively look, sometimes accompanied by a slight and characteristic haze due to the lack of filtration. The olfactory profile is essential and direct, strongly influenced by the action of the yeasts and the perfect balance between Chardonnay and Meunier. On the palate, it shows a tense and exceptionally clean progression with a dry sip due to the total absence of dosage.
