Description

What kind of wine it is

Montagny 1er Cru Montcuchot from Domaine Cottenceau is a dry white from the Côte Chalonnaise made from Chardonnay. The winemaking involves spontaneous fermentation with indigenous yeasts in French oak barrels, followed by a period in stainless steel. On tasting, it stands out for its medium body, juiciness and roundness, with vibrant freshness and a chalky minerality that recalls citrus and white fruit.

Where it comes from

It originates in Buxy, in the Côte Chalonnaise, from grapes grown in the Montcuchot vineyard. The southeast exposure and steep slope contribute to fruit balance. The limestone soils rich in fossils are reflected in its mineral sensation and chalky note on the palate. The vineyard work is focused on reading and expressing the terroir.

How it is produced

The grapes are gently pressed, then fermentation begins spontaneously thanks to indigenous yeasts. The wine ferments in French oak barrels, 50% of which are new, and ages for 14 months in the same casks, followed by a further 6 months in stainless steel vats. This approach helps preserve purity and aromatic expression, integrating the wood component without losing precision.

Tasting notes

On the nose, there are notes of yellow flowers, quince, crushed stone and lemon peel, with a hint of warm wood in the background. On the palate, it offers a medium, juicy and enveloping structure, with notes of citrus and white fruit. The finish is clean, thanks to the chalky minerality and a constant freshness that sustains the sip.

Food pairings

At the table, it pairs naturally with freshwater fish, where freshness and minerality enhance the delicacy of the flesh. It is also recommended with bloomy rind cheeses, as the juicy and rounded elements balance their creaminess without masking it. The citrusy profile and mineral tension make it suitable for dishes calling for a structured yet precise white wine.

When to serve it

It is the right choice when looking for a dry white that combines medium body and vibrant freshness, ideal for lunch or dinner. It is at its best when served with freshwater fish and bloomy rind cheeses, where the chalky minerality finds clear expression. The aging process between French oak and stainless steel supports a clean profile with perceptible, yet integrated, wood tones.
