Description
Sangue d’Oro Passito di Pantelleria is a sweet Mediterranean wine produced on the island of Pantelleria from Zibibbo grapes, born from Carole Bouquet's love for the island and for the passito tradition. The estate is located in Contrada Serraglia, at the foot of Montagna Grande, among terraced vineyards with dry-stone walls and volcanic soils, where bush-trained vines safeguard an authentic and precious viticultural heritage.
The winemaking process involves long and meticulous work, with successive harvests of grapes destined for drying and for still wine production. The grapes are dried under the sun and wind, concentrating sugars, acidity, and aromas. Part of the grapes undergo maceration on the skins, while another portion is gradually infused into the wine through maceration before pressing, maturation in stainless steel, and bottling.
On the nose, it reveals a complex and enveloping bouquet, with aromas of dried figs, almonds, and dehydrated apricots, accompanied by sweet and Mediterranean nuances. On the palate, it is dense, intense, and persistent, boasting a deep aromatic richness, balanced sweetness, and a long finish enhancing the natural concentration of the dried grapes.
Perfect pairing with dry pastries, fruit tarts, almond desserts, blue cheeses, and foie gras.
