What kind of wine it is

The Primitivo di Manduria by Notte Rossa is an enveloping red wine made exclusively from Primitivo grapes grown in the Salento peninsula. Its style is warm and structured, characterized by a pronounced profile of ripe fruit complemented by pleasant sweet spices derived from time spent in wood. The winemaking process combines fermentation in stainless steel containers with targeted aging in barriques, ensuring an excellent balance between deep aromatic richness and long-lasting persistence.

Where it comes from

This red originates from vineyards located in the heart of the Salento peninsula, a region renowned for its unique environmental conditions. The climate is defined by high temperatures and low rainfall, ideal elements for promoting regular ripening of the grape clusters. The soils are characterized by a medium-textured clay composition, a natural makeup that retains water and imparts body and structure. This context gives the glass remarkable color intensity and a full fruit character.

How it is made

The Primitivo grapes are harvested during the second week of September. In the winery, the process begins with a temperature-controlled maceration lasting about ten days, aimed at extracting visual intensity and aromatic components. Fermentation continues in stainless steel with selected yeasts, thus preserving the varietal's expressiveness. The wine then matures for five or six months in French and American oak barriques, during which it acquires its subtle spicy nuances.

Tasting notes

In the glass it shows an intense ruby red color, enhanced by a characteristic violet rim. The bouquet is deep, dominated by clear plum and black cherry notes that blend harmoniously with enveloping hints of cocoa and vanilla. On the palate it expresses a warm and well-structured body, guided by a subtle and pleasant sweetness that softens the sip and makes it satisfying. The finish is distinguished by its great persistence, leaving elegant fruity echoes.

Food pairings

The remarkable structure of this wine makes it an excellent partner for intensely flavored dishes. It pairs perfectly with well-seasoned first courses and finds its highest expression alongside lamb meat dishes. Its pronounced persistence on the nose and palate ideally supports the strong character of game and perfectly accompanies tastings of hard cheeses, achieving a fine balance in every bite.
