Primitivo di Manduria Riserva di Notte Rossa is a red wine produced in Apulia from Primitivo grapes. It stands out for its full, structured style and remarkable persistence. The winemaking process includes fermentation with indigenous yeasts and aging in French and American oak barriques. Its sensory profile combines an intense concentration of fruit with spicy and toasted notes imparted by the aging in wood.

Where it comes from

The grapes come from ancient vineyards located in the towns of San Marzano and Sava, within the classic producing area of Primitivo di Manduria. The vines root in soils characterized by red earth, a terrain especially rich in iron oxide. The significant temperature shifts of this specific area in the province of Taranto favor optimal development of the grape clusters and ensure perfect ripeness and a well-defined aromatic expression.

How it’s made

Harvest takes place in the second half of September, waiting for full ripening on the vine. In the cellar, the must undergoes extended maceration on the skins to extract color and structure, followed by fermentation at controlled temperature. The process finishes with an aging period of eighteen months in French and American oak barriques, a practice that gives the wine greater roundness and a smooth texture.

Tasting notes

In the glass, it shows an intense ruby red color, sign of strong extraction and grape maturity. On the nose, it reveals a complex bouquet dominated by plum and jammy cherry aromas, harmonized with elegant tobaccos nuances. On the palate, it is full-bodied, enveloping, and marked by a persistent finish with clear notes of coffee, cocoa, and vanilla, perfectly consistent with the barrel aging.

Food pairings

Thanks to its enveloping nature and solid structure, this red pairs well with game dishes and red meat preparations. It goes well with slow-cooked and flavorful recipes, where the cocoa and tobacco nuances find a precise counterpart in the dish.
