Description

What kind of wine is it?

Salento Primitivo by Notte Rossa is an Apulian red wine made exclusively from Primitivo grapes. The entire production process takes place in stainless steel, a choice that favors aromatic purity and a precise definition of the fruit. On the palate, it is full-bodied and well-balanced, supported by a pleasant freshness that lightens its structure. It shows an excellent correspondence between aroma and taste and also demonstrates a good potential for aging.

Where does it come from?

The grapes come from the south of Apulia, within the historic Salento area, a territory highly suited for viticulture. The vineyards are located about one hundred meters above sea level and are rooted in deep, clay-rich soils that enhance the concentration and expressive fullness of the grapes. Abundant sunlight, combined with a constant sea breeze, creates a Mediterranean climate that is ideal for preserving the freshness of the grapes.

How is it made?

The harvest takes place at the beginning of September to preserve the integrity and aromatic precision of the fruit. The entire process of vinification in stainless steel, from fermentation onward, ensures a controlled and consistent production style. The exclusive use of this material prevents oxidative interference, allowing for a clear varietal expression of Primitivo. This meticulous approach in the winery lays the foundation for a wine with structure and remarkable balance.

Tasting notes

In the glass, it displays a deep, intense ruby red color. The aromatic profile opens with fruity notes of plum and cherry, enriched by delicate hints of rosemary and a slight touch of vanilla. On the palate, it is full and robust, well-balanced by a freshness that brings order and stability to the tasting experience. The noticeable consistency between aroma and taste leads to a satisfying and structured finish.

Food pairings

The structure and character of this red make it an ideal match for hearty meat main courses. It is particularly well paired with grilled lamb chops, where the wine's intensity perfectly balances the succulence of the dish. The herbaceous notes perceived on the nose blend beautifully with typical grilled aromas, enhancing the most flavorful and rustic preparations.

When to serve it

It is the perfect choice for convivial dinners or to enrich a meat-based meal, as it offers a full and refreshing profile at the table. Its intrinsic structure allows it to be enjoyed right away, but at the same time, it can also develop in the bottle if allowed to rest for a few years. It is recommended to serve at an appropriate temperature to highlight the aromatic definition provided by stainless steel, ensuring a clean and smooth tasting experience.
