Nose of pomegranate and raspberry, with a nice trace of marjoram at the end of the smell. The mouth is iodized, crunchy, with a return, on the finish, of the officinal note.

Description

What kind of wine is it

Notte Rossa Salento Primitivo Rosato is a rosé wine from Apulia produced exclusively with Primitivo grapes. Its production, designed to enhance the qualities of the varietal, includes a rapid passage in the cellar to ensure a clean and immediate sensory profile. The result in the glass displays a fresh and elegant style, characterized by precise balance and an easy-drinking character, ideal for the table.

Where does it come from

The vines thrive in vineyards located in Salento, growing close to the Ionian coast. This area benefits from sunny days and constant breezes, fundamental elements to preserve natural acidity and promote a well-defined aromatic expression. The proximity to the sea imparts a clear climatic influence to the grapes and directs the interpretation of this rosé towards a pronounced sensation of freshness.

How is it made

The grape clusters reach the cellar during the first week of September, a specific moment chosen for the harvest. The winemaking process begins with a controlled skin maceration lasting several hours, calibrated to achieve the correct hue and the aromatic nuances of the grape. The process is completed with targeted aging in stainless steel, an essential technique to preserve the fragrant nature and clean profile of the must.

Tasting notes

In the glass, the wine shows a pale pink color with a clear luminosity. On the nose, it presents a defined, summery profile, introduced by hints of Mediterranean scrub blending with fruity notes, particularly evoking cherry and raspberry. The taste reveals an elegant and well-balanced palate, driven by a vibrant structure and a clean finish that encourages another sip.

Food pairings

Its natural gastronomic inclination makes it suitable to accompany a selection of light appetizers. It pairs precisely with seafood flavors and enhances dishes like fish soups and foil-baked fish. Its balance and versatility also allow it to harmoniously match fresh cheeses for a consistently well-calibrated pairing.

When to serve it

Its agile profile makes it an excellent choice for immediate consumption, ideal for informal occasions and friendly gatherings. It expresses itself with great consistency when served as an all-meal wine, especially with light seafood recipes. Enjoyed young, it offers the palate the full integrity of its aromatic clarity and the verve of its tasting journey.
