What kind of wine is it
Giulio Ferrari Collezione by Ferrari is a vintage Trento Metodo Classico, conceived for long aging. It rests on the lees for more than eighteen years, which gives it a structured, complex style, yet one that is also fine and elegant. It is a version of the Riserva del Fondatore that remains in the cellar much longer before release. It comes in a black wooden case with gold accents, designed to store and present the bottle.
Where it comes from
This wine originates in the Trento appellation, in Trentino, where the vines grow on hillsides at high altitudes. Here, sunny days and cool nights ripen the grapes slowly, so the wine retains its acidity and aromas. The minerality of the mountain soils shows in the sip, remaining vertical and saline even after many years of aging.
How it's made
Giulio Ferrari Collezione is made from Chardonnay grapes and is produced only in the best vintages. After vinification, the secondary fermentation takes place in the bottle according to the Metodo Classico. The wine then remains on the lees for over eighteen years, in cellars at a constant temperature. This long rest slowly develops complex aromas and makes the bubbles softer and silkier.
Tasting notes
In the glass it is an intense straw yellow with golden highlights, and the perlage is fine and persistent. On the nose there are bread crust and flowers, then tropical fruit, dried fruit, acacia honey and white chocolate. Notes of spice, incense and a clear minerality close. On the palate it is enveloping and vertical: the acidity supports the structure and the silky perlage carries dried fruit and mineral sensations. The finish is long and saline.
Food pairings
Giulio Ferrari Collezione pairs with the most refined seafood dishes, such as oysters, prawn tartare, sea bass carpaccio and baked or steamed fish. It also works well with seafood risotto and creamy, semi-mature cheeses. With Trentino cuisine it accompanies canederli with cheese and strangolapreti with butter and sage. Among international dishes, its freshness makes it excellent with ceviche.
When to serve it
It’s the wine to pop open on special occasions, such as anniversaries, parties and important dinners. With its wooden case it also makes a meaningful gift for lovers of Italian bubbles. Serve at 10-12 °C, a little cooler than a red but not as cold as a young white. Use a large tulip-shaped glass so the evolved aromas open up better.
