What type of wine it is

This Trento Extra Brut Riserva from Cesarini Sforza is made from 100% Chardonnay, selected from the winery’s most prized vineyards. It stands out for the balance and palate harmony typical of the appellation, in an elegant style with good persistence.

Where it comes from

The grapes come from the most favored vineyards of the Valle di Cembra in Trentino, characterized by deep, sandy soils that lend the wine notable salinity and minerality, particularly evident on the finish.

How it is made

Harvest is carried out by hand in the first ten days of September. This is followed by gentle pressing of whole clusters and temperature-controlled fermentation in stainless-steel tanks. The wine ages using the Metodo Classico, in a Riserva version, the style that distinguishes the finest sparkling wines of the appellation.

Tasting notes

The perlage is dense and persistent. The nose is refined, while the palate is rich, with a saline and mineral finish.

Food pairing

It pairs elegantly with fresh cheeses, especially the creamiest ones.

When to serve it

Its saline, mineral profile makes it suitable both as an aperitif and to accompany convivial moments and elegant dinners.
