What kind of wine is it

Collalto’s Ponte Rosso is an Extra Brut Vintage sparkling wine, made entirely from Glera grapes within the Conegliano Valdobbiadene Prosecco Superiore denomination, specifically the Rive di Colfosco. It presents a pale, bright straw-yellow color, expressing a dry, structured and mineral style. It represents the most contemporary version of this denomination, with an essential and direct profile. It is a wine conceived for those seeking precision and elegance in a glass of Prosecco Superiore.

Where it comes from

The grapes come from the Rive di Colfosco, a steep vineyard located west of the Castello di San Salvatore, where the soil is particularly clayey with a rocky base and a southern exposure. In this area, in the past, a deep red clay was extracted and used to make bricks and roof tiles; it is from one of the bridges built with these bricks that the wine takes its name, Ponte Rosso. The Glera grown on these mineral-rich soils inherits a pronounced minerality. This specific origin gives the wine structure, longevity and a strongly distinctive character.

How it is made

The Glera grapes are hand-harvested in the estate’s vineyards. This is followed by gentle pressing, static settling of the must and fermentation in temperature-controlled tanks at eighteen degrees, with three months of ageing on fine lees in stainless steel. The second fermentation takes place according to the Martinotti–Charmat method, with a long period on the yeasts followed by tartaric stabilization, before filtration and bottling. Ageing continues in autoclave for three months and subsequently in bottle for one or two months.

Tasting notes

To the eye it shows a pale straw-yellow, bright color. On the nose it reveals good aromatic intensity, with notes of white flowers, wisteria, pear, apple and lime, enhanced by a delicate, fragrant hint of brioche. On the palate it is well balanced, with well-integrated, mouthwatering acidity and a fine, silky perlage. Essential and almost austere yet refined, it finishes dry, fruity, with a light mineral note.

Food pairing

This Prosecco pairs excellently with classic seafood and shellfish, where its mineral freshness enhances their savoriness. It also pairs consistently with oily fish, capable of balancing its mouthwatering acidity. It finds a good match with white meats as well, accompanying them without overpowering. Its essential structure makes it versatile throughout an entire fish-based meal.

When to serve it

It is recommended to serve Ponte Rosso at a temperature of 6-8°C, ideal for enhancing its freshness and mineral component. Its dry, straightforward profile makes it suitable both as an aperitif and alongside a full fish-based meal. Thanks to its structure and minerality, it is also suitable for bottle ageing over time.
