Description

What kind of wine it is

Valpolicella Ripasso by Dal Moro is a red wine made from the typical grapes of Valpolicella. It is produced using the ripasso technique on the Amarone pomace, which gives the wine a solid structure and a complex aromatic profile. Fermentation in steel and subsequent aging in wooden barrels contribute to a balanced freshness and elegant texture, making it suitable for those seeking a characterful yet approachable red.

Where it comes from

This wine comes from the historic Valpolicella area in the province of Verona. The vineyards are located between 250 and 450 meters above sea level, on clay-limestone soils that enhance minerality and balance. The region's long winemaking tradition is reflected in the wine's quality and identity.

How it is produced

The grapes are hand-picked at the beginning of October, selecting only the best clusters. After destemming, the must ferments in steel at a controlled temperature. The wine is then subjected to ripasso on the Amarone pomace and remains in contact with the skins for greater color and tannin extraction. Aging continues in wooden barrels, then the wine matures in steel and rests in the bottle, providing stability and aromatic complexity.

Tasting notes

Valpolicella Ripasso appears deep ruby red with garnet highlights. The bouquet is broad, with notes of ripe cherry, plum, and sweet spices such as vanilla and black pepper. On the palate, it offers a medium-full body, soft tannins, and a lively acidity that balances the structure. The finish is long, with toasty notes and a hint of dark chocolate.

Food pairings

This wine pairs well with Veronese first courses such as bigoli with duck ragù and risottos, especially Amarone risotto. It shines with rich main courses like braised beef and grilled pork ribs. Among international dishes, it accompanies meat stews and spiced roast lamb. Its structure enhances flavorful dishes, highlighting the organoleptic qualities of each course.

When to serve it

Valpolicella Ripasso by Dal Moro is ideal to enjoy within 3-5 years from the harvest to best appreciate its freshness and fruitiness.
