Gnocchi with ragù - Expert pairings to choose the perfect glass

Gnocchi with ragù are a timeless classic among Italian first courses, where the softness of the potatoes and the richness of the meat sauce call for wines capable of balancing savoriness, acidity, and structure. For the traditional version with Bolognese or Campania-style ragù, a Chianti Classico or a Cerasuolo d'Abruzzo offer a well-balanced pairing: the acidity and tannic structure of Sangiovese, or the lively, fruity freshness of Cerasuolo, cut through the richness without overpowering the gnocchi’s delicacy. If the dish is served instead with a generous sprinkle of Parmigiano or in a slightly richer variation, the effervescence of a dry Lambrusco helps to refresh the palate with a lively, pleasant touch.

When the ragù grows more intense, spicier, or is prepared with flavorful meats such as wild boar, lamb, or sausage, you’ll want wines with greater body and warmth. A Primitivo or a Syrah pairs perfectly with the spiced notes and more structured sauces, thanks to their berry aromas and smooth, enveloping palate. Finally, for especially rich interpretations, slow-cooked or enriched with melted aged cheeses, a Malbec delivers the right structural power and velvety tannins to stand up to every bite.
