Baccalà e piatti di magro

Baccalà is the undisputed protagonist of the Lenten season, a noble ingredient that has connected the coasts of the North Atlantic with the culinary traditions of the Mediterranean for centuries. This cuisine, made up of authentic flavors and top-quality ingredients, requires wines capable of complementing the generous texture and natural savoriness of the fish. To enhance iconic dishes like baccalà alla livornese, we have selected still wines with great personality, ideal for supporting the character of tomato, olives, and capers.

From the structure of Garganega and Vermentino to the volcanic minerality of Santorini's Assyrtiko, each label is chosen to balance the flavorful component of the fish and cleanse the palate. This collection includes international gems like Galician Albariño and Loire Muscadet, together with the strength of Ansonica and Vernaccia. Discover a selection designed for those seeking the ultimate pairing between a story that crosses oceans and a cosmopolitan gourmet experience.
