Wine pairings for carbonara: which to choose

The best wine pairings for carbonara lean toward a fresh, saline white capable of standing up to guanciale and pecorino—from Frascati to Franciacorta. To choose the right wine for carbonara, start from the ingredients: the pasta has a slightly sweet note, the egg brings creamy richness, the guanciale is savory and unctuous, Pecorino Romano offers intense, salty flavor, and the pepper adds heat. Altogether, the dish calls for a white wine with balanced freshness, aromatic intensity, a harmonious mid‑palate, and a finish of good length.

The most natural choice is local: Frascati Superiore, with its classic blend of Trebbiano and Malvasia, perfectly expresses these traits. A solid alternative is Orvieto Classico, one of the oldest and most storied whites on our peninsula, or Soave Classico, made from the native Garganega grape, balanced and saline. Near Verona you’ll also find Custoza Bianco, a blend of Garganega, Bianca Fernanda, and Trebbianello, equally suitable.

White or red wine with carbonara?

With carbonara we advise against full‑bodied reds: they’re too powerful, persistent, and tannic for a dish with a soft mid‑palate. If you want an alternative to a still white, a fresh, saline Traditional‑Method Brut sparkling wine helps cleanse the palate thanks to its bubbles—Franciacorta is the perfect choice. Those who prefer rosé can try a Chiaretto della Valtènesi, with floral notes, delicate fruit, and a fresh, saline finish.

In our selection you’ll find whites, sparklers, and rosés designed specifically for carbonara, from Lazio and Umbria classics to the bubbles of Franciacorta: an assortment built on pairing, not on chance.
