Polenta is one of the most celebrated age-old dishes of rural tradition, a true cornerstone of the culinary culture of Northern Italy. For many centuries it was the staple food for mountain communities and the northern lowlands. It’s a humble yet nourishing dish made with cereal flours. Whereas in the past rye, spelt, millet, or buckwheat were used, from the 15th century onward the arrival of maize from the Americas revolutionized local recipes, making this New World grain the star ingredient of the classic copper cauldron.

The traditional preparation is a ritual of patience and simplicity. Into a pot of boiling, salted water, sprinkle in the flour gradually, stirring constantly for at least 45 minutes, until you obtain a soft, warm, and homogeneous mixture. In peasant culture, polenta was the ultimate one-dish meal, paired with alpine cheeses, salt-cured sardines, or the less noble cuts of pork. Today, polenta has become an excellent alternative to bread, perfect for soaking up and enhancing stews, braises, and succulent sauces.

Pairing rules: the importance of the accompaniment

When choosing a wine to pair with polenta, the most common mistake is to focus on the cornmeal. In reality, we should think exclusively about the dish that accompanies it; otherwise it’s like trying to pair a wine with plain bread. The mountains’ signature dish is paired according to the sauce: a red for ragù or a white for melted cheeses, preferably local.

Northern reds for ragù, meats, and braises

Polenta served with a classic meat ragù pairs beautifully with reds of good body. Staying in the north, a Lagrein from Alto Adige offers the right plushness and intensity to elevate the dish. If instead we have a richer preparation, such as sausages or cotechino, we’ll need higher acidity to refresh the palate: a good Barbera d'Asti will do nicely, or alternatively a young, fresh Nebbiolo d'Alba.

If the polenta accompanies longer-cooked, more structured preparations, such as a brasato, a beef stracotto, or game, we’re dealing with a complex, rich, and succulent recipe. In this case we’ll need a wine with firm tannins, depth, and lasting aromatics. We could uncork a majestic Barolo from Serralunga or a rustic Raboso del Piave. With a hearty Trentino goulash, or a donkey stracotto, the perfect choice is the power and elegance of an Amarone della Valpolicella.

Structured white wines for cheese, mushrooms, and fish

The rules change dramatically when meat gives way to dairy. If polenta accompanies cheese, as in the famous polenta concia, we’ll turn to intense, structured white wines. Timorasso from the Colli Tortonesi, with its pronounced salinity and aging potential, is the ideal partner to balance the richness of melted mountain cheeses.

We’ll also choose great white wines when pairing with mushrooms cooked in white, favoring fragrant, slightly aromatic bottles such as a Gewürztraminer or an Alto Adige Pinot Bianco. Finally, to honor a timeless classic like polenta with baccalà alla vicentina, we’ll rely on Veneto’s finest: the pairing of choice is a Metodo Classico Monti Lessini based on Durella grapes, whose bubbles cut perfectly through the richness, or alternatively a savory Vespaiolo di Breganze.
