In de lente en de zomer komt verse tonijn in veel gerechten voor, waarbij de balans tussen de kwaliteit van het ingrediënt en de eenvoud van de bereiding opvalt. Tot de meest kenmerkende bereidingen behoren de tagliata di tonno, vaak geserveerd met een kruiden- of zadenkorst, en rauwe bereidingen zoals de tartaar, waarbij de versheid van de vis naar voren komt dankzij frisse citrusaccenten. Van bijzonder historische waarde zijn de recepten uit de Sardijnse en Siciliaanse traditie, zoals tonno alla carlofortina of zoetzure bereidingen, die de oude cultuur van de tonijnvisserij weerspiegelen met hartige en gelaagde smaakcombinaties.

Een goede wijnkeuze vraagt om een selectie die het stevige karakter en de gematigde vetheid van deze vis kan ondersteunen. Bij gegrilde of rauwe gerechten zijn gestructureerde witte wijnen met uitgesproken zuurgraad, zoals Vermentino di Sardegna of Fiano di Avellino, aan te raden. Dankzij het frisse, ‘vlezige’ karakter van tonijn kan deze ook worden gecombineerd met krachtige roséwijnen, zoals Cerasuolo d’Abruzzo, of met lichte, soepele rode wijnen die licht gekoeld worden geserveerd, zoals Frappato. Bij meer complexe of gekruide bereidingen zorgt een mousserende wijn van het Metodo Classico met voldoende rijping voor de nodige lengte en frisheid in de afdronk.
