De belangrijkste druiven die worden gebruikt om deze wijnen te produceren zijn Corvina, Corvinone en Rondinella, waaraan kleinere percentages inheemse of internationale wijnstokken worden toegevoegd.

Valpolicella Ripasso wordt geproduceerd op basis van de Valpolicella-basiswijn en wordt vervolgens ongeveer 2 weken op de resterende Amarone-pulp bewaard.

Amarone daarentegen is een van de meest geliefde Italiaanse rode wijnen, ook op internationaal niveau. De druiven worden gedeeltelijk gedroogd en vervolgens gebruikt om een droge wijn te produceren, die minimaal 2 jaar moet rijpen.
