Description

Damaschito by Grifalco is a red wine made from 100% Aglianico grapes grown in the vineyard located in the area of the Maschito municipality, in the heart of Vulture. The harvest is done by hand with a careful selection in the vineyard, followed by a second sorting in the cellar with an advanced linear destemming system, allowing the removal of any green residue and preserving only perfectly ripe berries.

The vinification includes gentle crushing and destemming and fermentation in Slavonian oak vats, with a controlled temperature that never exceeds 28°C. Maceration lasts for more than 60 days, permitting optimal extraction of color, structure, and aromas, while malolactic fermentation occurs naturally. The wine is then aged for a period of 12 to 18 months in Slavonian oak barrels, before further refining in bottle for at least 12 months.

On the eye, it shows a deep and bright ruby red color. The bouquet expresses all the depth of the grape and the Maschito terroir, with mineral notes of embers and smoke, aromas of cherry and floral hints, accompanied by touches of black pepper and undergrowth. On the palate it is broad and assertive, with a solid structure, notes of graphite and iron, sweet tannins, and a vibrant acidity that supports the persistence and balance of the wine.

It pairs perfectly with game, braised meats, and aged cheeses, enhancing their complexity with its elegant depth.
