What kind of wine is it?
Amarone della Valpolicella Mai Dire Mai by Pasqua is a still red wine made from a blend of Corvina, Corvinone, and grapes subjected to appassimento in Valpolicella. It reveals structure and complexity, with ageing potential. Fermentation in stainless steel at controlled temperature and maturation in French oak barrels create a harmonious profile. This wine offers a decisive character, a full texture and precise tannins, along with a well-perceived freshness.
Where does it come from?
This Amarone comes from the Montevegro vineyard, about 350 meters above sea level between Val d’Illasi and Val di Mezzane, in the heart of the historic area. The microclimate, with strong temperature fluctuations and continental influences, allows slow and complete ripening. The calcareous-clay soil ensures good drainage and a mineral imprint, giving the territory a distinct identity.
How is it produced?
Harvesting is done by hand with careful bunch selection. This is followed by a period of appassimento (drying) of about four months in the fruit loft, then gentle pressing, cold maceration and fermentation in stainless steel at controlled temperature. Malolactic fermentation takes place in steel. Ageing continues for twenty-four months in new French oak barrels, and the blend with Rondinella and Oseleta adds further complexity to the profile.
Tasting notes
In the glass it displays a deep ruby red color with garnet nuances. On the nose, ripe cherries, raspberries, and blueberries emerge, alongside sweet spices, tobacco, and aromatic herbs. The palate is broad and enveloping, featuring blackberries and dark chocolate. The tannic texture is precise, and acidity is balanced, leading to a long, savoury, and mineral finish.
Food pairings
This Amarone pairs well with robust red meat dishes such as braised beef or roasted venison with sour cherry reduction. Its structure also enhances aged hard cheeses, like Parmigiano Reggiano or Pecorino delle Balze Volterrane. Locally, it’s a classic with Amarone risotto and also suits Hungarian goulash or Provençal-style beef tagliata.
When to serve it
Recommended for important occasions or celebratory moments. This wine is enjoyable after a few years and can reach its full potential between the fifth and fifteenth year, with storage at 14-16 °C and controlled humidity. The ideal serving temperature is 16-18 °C, using large glasses to fully express its aromas and structure.
