Description

What type of wine is it

Barbaresco Pajè by Produttori del Barbaresco is a structured red wine and a faithful expression of the Langhe region of Piedmont. Made entirely from Nebbiolo grapes, this wine originates from the eponymous vineyard located in the commune of Barbaresco. The winemaking process involves strict temperature control and a lengthy ageing period, designed to deliver a defined and persistent profile in the glass. The balance between spicy notes and pleasing freshness makes this red wine a perfect interpreter of the unique features of its place of origin.

Where it comes from

The grapes for this wine come from the Pajè vineyard, a hillside plot boasting clay and limestone soils enriched by a significant sandy presence. This unique geological composition is fundamental for providing the wine with its distinct aromatic definition. The southwest and west-facing exposure ensures constant, optimal sunlight during the delicate ripening phase of the grapes. These microclimatic conditions enable Barbaresco to achieve a complex structure and remarkable longevity.

How it is produced

The Nebbiolo grapes are first fermented in stainless steel tanks at a controlled temperature of thirty degrees for twenty-eight days. This long contact between the must and the skins allows for deep extraction of color and aromatic compounds. The wine is then aged slowly for thirty months in oak barrels, a crucial stage for softening and integrating the structural components. The process concludes with a further twelve months of bottle ageing, which ensures excellent aging potential.

Tasting notes

In the glass, the wine presents a bright ruby red color, typical of barrel-aged wines. The bouquet opens with intense and delicate spicy aromas, alongside a lively hint of fresh and fragrant fruit. On the palate, it reveals a medium body, supported by a pleasant acidity that carries each sip effortlessly. The finish is very persistent and rich, featuring elegant spicy returns that confirm the harmony between taste and structure.

Food pairings

Thanks to its aromatic intensity and well-defined texture, this red is the ideal companion for hearty first courses with rich sauces. Its depth makes it especially suited to accompany red meats cooked slowly, where the wine's pronounced freshness perfectly balances the succulence of the dishes. It also pairs very well with game dishes, creating a lively interplay that enhances both the spices in the food and the aromatic notes of the wine.

When to serve it

This Barbaresco is the perfect choice for special gatherings, when you want to present a wine with a distinctive and profound character. It can be enjoyed young to appreciate its vibrant fruit, but thanks to the extensive barrel ageing, it has a great predisposition for ageing. Serving it at elaborate dinners allows you to savor a red capable of maintaining its vivid character on the palate and evolving fascinatingly in the glass over time.
