Barolo Comune di Barolo Essenze di Vite Colte is a still red wine made exclusively from Nebbiolo grapes. It is produced in the hills of the Langhe, in Piedmont, a region renowned for the cultivation of this variety. Where does it come from
This wine is crafted from vineyards located within the municipality of Barolo, the true nerve center of the namesake denomination in Piedmont. The vines grow on hills characterized by highly variable soils, which impart unique nuances to the grapes. Sun exposure and a continental climate, marked by beneficial temperature fluctuations between day and night, foster a slow and gradual ripening of the grapes, defining a distinctly territorial character.
How it is produced
After a careful selection of the best Nebbiolo grape bunches, the must undergoes a skin maceration of about twenty days, necessary to extract color and aromatic components. Next, malolactic fermentation takes place in stainless steel tanks, a choice that guarantees cleanliness and precision for the wine. The process continues with a phase of ageing in small wooden barrels lasting twenty-four months, which softens and integrates the tannins, followed by a further bottle ageing of six months.
Tasting notes
In the glass, it reveals an intense ruby red color enriched by garnet hues as it ages. The bouquet is complex and intense, characterized by floral aromas of violet intertwined with evolving hints of goudron and spicy notes of vanilla from the wood ageing. On the palate, it shows a warm and enveloping texture, with a pleasantly dry sip supported by well-integrated tannins. It ends with a long and persistent finish.
Food Pairings
Thanks to its structural importance, it proves to be an ideal accompaniment for long-aged cheeses and truffle-based preparations. The strength of its tannic structure and lasting flavor make it suitable for balancing game meat main courses and intensely flavored risottos.
