Bolgheri DOC 2021 Tenuta Le Colonne

Dievole Le Colonne Bolgheri comes from a fine blend of 70% Cabernet Franc, 20% Merlot and 10% Cabernet Sauvignon and a clayey and stony soil, which forces the vine to seek nourishment more deeply, giving the wine an excellent minerality.

Its alcoholic fermentation takes place in concrete vats with native yeasts for 13 days, at a controlled temperature. Finally it refines for 12 months in French oak barrels and 3 months in the bottle.

It shows a dense ruby red color, with reflections that tend to garnet. The nose is immediately intoxicated by pleasant hints of ripe, red and black fruit, among which blackberry and cherry stand out, and then delicately fades towards floral hints of violet mixed with vanilla, tobacco and toasted coffee. Full, warm and rich in the mouth, with a satisfying sip and a pleasantly vigorous finish.

It is the ideal wine to leave in the cellar for a while even for 5 years, and then combine it with good risotto with meat sauce as well as stewed red meat. Try it with a porcini mushroom risotto.
