Description
The Bourgogne Les Verchères is a dry white wine produced by Domaine Maxime Cottenceau in Buxy, located in the Côte Chalonnaise, Burgundy. Derived from Chardonnay grapes sourced from 45-year-old vines in the southern part of Montagny, north-facing, this wine reflects the producer's commitment to enhancing the terroir through organic farming practices in the process of certification.
The winemaking process involves hand-picking of the grapes, followed by a slow and gentle pressing. Fermentation occurs spontaneously with native yeasts, partially in new French oak barrels and partially in stainless steel vats. Aging continues for 14 months in the same containers to preserve the wine's purity and expressiveness.
On the nose, you can perceive aromas of yellow flowers, citrus zest, fresh ginger, and toasted notes. On the palate, the wine offers a medium structure, juicy and enveloping, with flavors of citrus and white fruit, supported by a lively minerality and balanced freshness.
Ideal pairing with river fish or bloomy-rind cheeses.
