Description

The Bourgogne Pinot Noir by Labouré-Roi is born from a careful selection of grapes grown in different terroirs of Burgundy, from Yonne to Côte d'Or, passing through Côte Chalonnaise to Mâconnais. The soils range from limestone and Kimmeridgian hills in the north, to limestone marl and granite clay in the south. This Pinot Noir expresses an elegant and accessible profile, perfectly balanced between freshness, fruit, and structure.

Once harvested, the grapes are destemmed, crushed, and subjected to cold maceration between 10 and 12°C for five days to favor the extraction of aromas. This is followed by alcoholic fermentation with selected yeasts, accompanied by daily pump-overs and punch-downs for 10-12 days. After racking, the wine ages for 6-8 months on fine lees: 80% in stainless steel and 20% in wood, to add complexity without losing freshness.

With an elegant ruby red color with violet hues, the nose expresses a fine and subtle bouquet of small black fruits. The sip is soft and round, with velvety tannins and a pleasant freshness that makes the wine harmonious and easy to drink.

It is ideal as an aperitif or with cold cuts, tuna tataki, pasta, savory pies, stews, or Camembert cheese.
