How it is made
The Sangiovese grapes are vinified separately in tulip-shaped cement vats, where alcoholic and malolactic fermentation occur simultaneously during the maceration process. Extraction of phenolic compounds takes place at controlled temperature through gentle punch-downs and pump-overs. The maturation involves a lengthy thirty-month rest in Austrian oak barrels, followed by a careful blending and a final ageing in cement for an additional six months.
