Description
The Cerasuolo d'Abruzzo Fosso Cancelli by Ciavolich is a wine that expresses the essence of the Loreto Aprutino area.
Produced exclusively from indigenous red grapes, hand-harvested, it begins with skin maceration for 12-24 hours in small cement vats. Spontaneous alcoholic fermentation follows, after which a portion of fermenting must is drawn off using the "saignée" technique and transferred to a terracotta amphora to complete the fermentation process. The entire batch is then aged on fine lees in the amphora until bottling.
It shows a clear ruby red color. On the nose, it expresses notes of raspberry, grape pomace, and dog rose, with a distinctly wild character. On the palate, it is fresh and savory, with good structure.
Excellent with cold cuts and grilled fish, it is ideal with shellfish.
