Description
What kind of wine it is
The Champagne Blanc de Blancs Brut from Mademy is a refined wine produced in the Champagne region of France exclusively from Chardonnay grapes. This cuvée comes from the first pressings and includes a carefully selected portion of reserve wines that lend balance and depth to the flavor profile. Its production strictly follows the principles of the Traditional Method to ensure an elegant character and a streamlined palate. A fresh, harmonious signature defines the house style and offers a clean, well-balanced tasting experience.
Where it comes from
The grapes come from prime terroirs located in the Montagne de Reims and the Vallée de la Marne. Focusing on these two specific areas shapes an approach geared toward precision and expressive purity while preserving Chardonnay’s typical varietal identity. The use of reserve wines in the blend ensures deep continuity of taste over time and refines the wine’s structure. These geographical origins consistently delineate the sensory profile and technical stance of the cuvée.
How it is made
The base is obtained from the finest musts derived from the first pressings. Vinification continues in stainless-steel tanks with a slow alcoholic fermentation at low temperatures to preserve aromatic clarity. Subsequently, the completion of malolactic fermentation imparts a rounded texture to the wine. Finally, following Traditional Method practices, the wine undergoes maturation in cellars at a constant temperature while resting on the lees for a period between twenty-four and thirty-six months.
Tasting notes
In appearance it shows a straw-yellow hue tending toward gold, the result of extended aging on the lees. The nose reveals delicate aromas of yellow-fleshed fruits with clear hints of peach and apricot, enriched by mineral notes and citrus nuances of lemon and grapefruit. On the palate, the entry is round and well-defined, evolving into a fresh, streamlined and harmonious palate. Development on the palate maintains excellent precision and closes on a clean finish that is well balanced.
Food pairings
This wine is ideal as an aperitif and pairs with seafood preparations where freshness and finesse stand out. Its citrus notes complement truffled scallops and balance the tender flesh of turbot fillet or shellfish. In the French tradition, it pairs naturally with oysters and finds a perfect match with classic Cheese Gougères. These savory choux puffs enhance the streamlined sip and the minerality of the cuvée.
When to serve
This is the Champagne for convivial moments that call for an elegant, refreshing glass, from the start of the evening through seafood courses. Its Brut style makes it suitable whenever you want a clean, straightforward pour that accompanies food with ease. Thanks to the long aging, it arrives in the glass with perfectly tuned maturity. It is the ideal choice for seafood dinners, offering a steady balance between initial roundness and prolonged freshness.
