Where it comes from
Brut Impérial is born in the Champagne region, in North-Eastern France, where the cool climate and chalky clay soils rich in fossils favor high-quality grapes. The vineyards, ranging from 90 to 300 meters in altitude, benefit from constant ventilation and optimal sunlight. These conditions support a slow ripening, favorable to natural acidity and the mineral aromas that are typical of Champagne.
How it is made
The production of Brut Impérial begins with the manual harvesting of grapes from numerous Grands and Premiers Crus. After gentle pressing, the musts ferment separately in stainless steel at controlled temperatures to preserve freshness. Reserve wines are included in the blend to guarantee consistency and complexity. The second fermentation takes place in the bottle according to the Traditional Method, followed by at least 24 months of aging on the lees, with manual remuage and disgorgement.
Tasting notes
Brut Impérial presents a brilliant straw-yellow color with golden and greenish highlights, and a fine, persistent perlage. On the nose, notes of citrus, green apple and white flowers emerge, accompanied by hints of brioche and hazelnut. The palate is fresh and harmonious, with balanced structure and good acidity. The taste reveals white fruits such as pear and peach, delicate mineral nuances and a long, citrusy finish.
Food pairings
Brut Impérial pairs perfectly with seafood dishes like oysters, shellfish and fish carpaccio, with a style that enhances their delicacy thanks to its acidity. It is ideal with sushi and sashimi, accompanying the flavor of raw fish without overpowering it. It also goes well with Provençal fish soup, smoked salmon and Italian dishes such as seafood risotto, where the creaminess of the rice harmonizes with the liveliness of the Champagne.
When to serve it
Brut Impérial is meant to be enjoyed young, within the first five years after bottling, when freshness and acidity are most evident. Thanks to the balance between fruit and lees aging, it can evolve up to eight years, developing notes of pastry and hazelnut. The ideal serving temperature is between 6 and 8 °C, which enhances the perlage and aromatic nuances, whether as an aperitif or paired with food.
