Description
Rosé de Saignée Brut Nature is a sparkling wine made from grapes grown on a clay-limestone terroir with a north-facing exposure. The estate was established in 1946 by the winegrowers of Chavot-Courcourt. Chavost is the ancestral name of the village located between the church of Saint-Martin and the Mont-Félix hill, where a castle once stood. This label is part of the range of Champagne with no added sulfites.
The wine is made from Pinot Noir and Pinot Meunier, using the 100% Saignée method. Vinification involves maceration in temperature-controlled stainless steel tanks, followed by aging in French oak barriques, all without the addition of sulfites. Pre-fermentation maceration takes place cold, without enzymes, tannins, or chaptalization. Alcoholic fermentation takes place at 17°C with indigenous yeasts, followed by malolactic fermentation at 20°C.
On the nose, it is very powerful, with aromas of red fruits typical of the two Pinots (Noir and Meunier), blackcurrant, cherries, and bright raspberries. On the palate, it is highly structured, vinous, and with impressive length.
Perfect to enjoy on its own or paired with refined fish and seafood dishes, fresh cheeses, and light starters.
