Description
What kind of wine is it
Chassagne-Montrachet by Olivier Leflaive is a white wine made exclusively from Chardonnay grapes, produced in Burgundy in the Chassagne-Montrachet area. It results from a gentle pressing and, after alcoholic fermentation, ages for 18 months in oak barrels, defining a precise and well-balanced style between aromatic freshness and generous structure.
Where it comes from
It comes from Chassagne-Montrachet, where the terroir varies even within the same denomination. Towards Santenay, the soils are more clayey and deep, while near Puligny-Montrachet, the soils are lighter and gravelly. This variability contributes to a profile that combines tension and breadth, maintaining a clear tasting line.
How it is produced
The Chardonnay is harvested entirely by hand to preserve the integrity of the bunches and allow for careful selection. The grapes are then pressed with pneumatic presses to obtain a clean and controlled must. After alcoholic fermentation, the wine matures for 18 months in oak barrels, integrating the winemaking process with orderly aging.
Tasting notes
In the glass, it shows a straw yellow color. The bouquet is broad and delicate, with citrus hints and notes of white-fleshed fruit. On the palate, it offers a generous and defined sensation, with a progression that combines power and finesse in balance, supported by a continuous and composed texture through to the finish.
Food pairings
At the table, it naturally accompanies white meats and fish dishes. Its structure makes it suitable for preparations needing a white wine capable of supporting the dish’s consistency, while the aromatic freshness helps keep everything crisp and well controlled, even with subtle sauces.
When to serve it
Recommended when you want a white wine with personality for lunch or dinner, especially paired with fish and white meats. The oak aging contributes to a more prominent structure without losing definition. Served during the meal, it accompanies the evolution in the glass well, from the initial aromatic impact to the broader and more composed finish.
