Description

What kind of wine is it

Bastioni di Collazzi is a red wine from Chianti Classico, created from a blend of Sangiovese, Merlot, and Malvasia Nera. Its style combines fruit and spice, with a pronounced tannic structure and clearly perceivable freshness. The winemaking involves fermentation at a controlled temperature, spontaneous malolactic fermentation in stainless steel, and aging divided between wood, tanks, and bottle, to offer a coherent, food-oriented profile.

Where does it come from

This wine is produced in Tuscany, in the Chianti Classico area, where the vineyards are rooted in clay-limestone soils rich in stones and well-drained. These soil characteristics contribute to the wine's footprint, supporting precision on the palate and a savory perception, balancing fruity notes and spicy undertones.

How is it produced

The manual harvest is followed by immediate transportation to the winery and a manual selection of the grapes. Alcoholic fermentation is carried out at a controlled temperature around 25 °C, while malolactic fermentation occurs spontaneously in stainless steel tanks. Aging takes place for 15 months in barrels and tanks, finished with 3 months in bottle to refine the wine before release.

Tasting notes

In the glass, it shows an intense, brilliant ruby color with delicate garnet highlights. The aromatic profile is clear, with notes of morello cherry compote, small red berries, and spices. The palate is savory and complex, supported by a noticeable tannic structure; the finish is long and consistent, with lingering fruity and spicy returns.

Food pairings

Ideal with meat dishes, flavorful first courses, and aged cheeses. Its savoriness and tannic texture support rich preparations, while the fruit and spice notes pair well with intense sauces, keeping each sip enjoyable throughout the meal.

When to serve it

This red is perfect for lunch and dinner when a glass with a structured profile is desired, with pronounced tannins and a fruity and spicy expression. Serve when the menu offers robust flavors, making this wine a satisfying companion throughout the meal and ensuring a persistent finish.
