Description
What kind of wine is it
Chorey-les-Beaune by Joseph Drouhin is a red wine produced in Burgundy exclusively from Pinot Noir grapes. Vinified with total destemming and maceration in small tanks, it matures in oak to offer a soft and complex style. This red wine displays great fruity clarity and a pronounced elegance typical of Burgundy.
Where it comes from
This wine originates from the Chorey-les-Beaune area, located north of the city of Beaune and at the foot of the famous Corton hills. This designation boasts an ancient history, with viticultural roots documented since the Gallo-Roman era. The specific characteristics of the region encourage a distinct fruity expression and set the stage for an interesting evolution over time.
How it is produced
Production combines grapes from Joseph Drouhin's estates with those selected from local growers operating under strict guidelines. The manual harvest takes place using perforated crates to preserve grape integrity. After destemming, fermentation and maceration occur in small open vats using indigenous yeasts. Aging then continues in oak barrels for between twelve and sixteen months.
Tasting notes
In the glass, it shows a bright, clean red color, in keeping with the grape variety’s characteristics. The nose reveals distinct fruity aromas, especially notes of blackberry jam. On the palate it is smooth and rounded, offering a soft structure and a balanced finish. With bottle aging, the aromatic profile gains fascinating truffle and undergrowth notes and develops slightly wild nuances.
Wine pairings
Its round texture pairs ideally with red meats, poultry, and rich mushroom-based dishes. Particularly recommended is a pairing with the juicy consistency of roast chicken or the earthy flavor of sautéed mushrooms. The organoleptic features also match perfectly with local preparations such as boeuf bourguignon, creating a harmonious dialogue between the wine’s fluidity and the structure of the dish.
When to serve it
This elegant, smooth red is the right choice for accompanying a full meal since it retains pleasant drinkability. It can be enjoyed young to fully appreciate its immediate fruitiness, or kept in the cellar to enjoy its aromatic evolution. The drinking window ensures a rewarding tasting experience both in the short and medium term, as long as it is stored under optimal conditions.
