Description

Pecorino Colline Pescaresi by Cirelli is a white wine made exclusively from Pecorino grapes grown on clay and limestone soils, managed according to biodynamic principles. It is produced in a hilly area that favors freshness and expressive precision, with a focus on respecting the raw materials and the environment.

The grapes are destemmed and transferred to stainless steel tanks, where a brief maceration on the skins takes place before gentle pressing. Fermentation is spontaneous and occurs in steel, followed by a period of ageing on fine lees which adds complexity and structure to the wine without compromising its natural elegance.

On the palate, it reveals a fresh and dynamic profile, with lively acidity supporting white-fleshed fruit notes and subtle citrus hints. The sip is balanced, linear, and persistent, with a clean finish that encourages another taste.

It pairs well with fish dishes, white meats, fresh cheeses, and vegetable-based preparations.
