What kind of wine it is

Rosé de Nit by Raventós i Blanc is a natural rosé sparkling wine made from Xarel·lo, Macabeu, Parellada, and Monastrell. The winemaking process closely follows the Traditional Method to ensure a structured and enveloping profile. The process includes an eighteen-month aging on the lees, without malolactic fermentation to preserve the integrity of the fruit. During the secondary fermentation, only cane sugar is added. The style of the wine is defined by great freshness, a fine perlage, and a distinct mineral imprint that balances acidity and complexity.

Where it comes from

This wine is born in the Conca del Riu Anoia, within the territory of Sant Sadurní d’Anoia in Catalonia. The vineyards are managed through the rigorous application of biodynamic agriculture principles. The vines send their roots deep into clay-limestone soils of ancient marine origin, enriched by precious fossils. This unique geology supports the wine’s tension and accentuates its mineral sensation, resulting in a clear aromatic expression and a dry, vertical tasting profile.

How it is made

Harvesting is done by hand, followed by low-pressure pneumatic pressing to preserve maximum must clarity. Xarel·lo, Macabeu, Parellada, and Monastrell ferment separately in stainless steel tanks with indigenous yeasts, to maintain each grape variety’s identity in the final blend. The bottle re-fermentation using the Traditional Method is followed by a long period of aging on the lees. Avoiding malolactic fermentation helps maintain the original acidic drive and the wine’s expressive clarity of origin.

Tasting notes

In the glass, it displays a bright rosé color enlivened by a fine and continuous effervescence. The nose offers clear aromas of red fruits and white flowers, enriched by subtle hints of pastry and an underlying suggestion of the zone’s calcareous matrix.
