What kind of wine is it
Rosé de Nit by Raventós i Blanc is a natural sparkling rosé wine made from Xarel·lo, Macabeu, Parellada, and Monastrell. The winemaking strictly follows the Traditional Method to ensure a structured and enveloping profile. The process includes eighteen months aging on the lees, with no malolactic fermentation in order to preserve the fruit’s integrity. During the secondary fermentation, only certified organic cane sugar is added. The wine's style is defined by remarkable freshness, a fine perlage and a clear mineral signature that balances acidity and complexity.
Where it comes from
This wine originates in the Conca del Riu Anoia, within the territory of Sant Sadurní d’Anoia in Catalonia. The vineyards are managed through the rigorous application of the principles of biodynamic and organic farming. The vines sink their roots in clay and limestone soils of ancient marine origin, enriched by a precious presence of fossils. This particular geology supports the wine's tension and accentuates its mineral sensation, resulting in a clear aromatic expression and a crisp, vertical profile on the palate.
How it is made
Harvesting is done by hand and followed by gentle pneumatic pressing at low pressure to preserve the must’s utmost clarity. Xarel·lo, Macabeu, Parellada, and Monastrell ferment separately in stainless steel tanks with indigenous yeasts, maintaining each grape variety’s identity in the final blend. The bottle fermentation according to the Traditional Method is followed by a long rest on the lees. The technical choice to avoid malolactic fermentation preserves the wine’s original acidity and the expressive clarity of the territory.
Tasting notes
In the glass it shows a bright rosé color, animated by a fine and continuous effervescence. The aromatic profile expresses distinct scents of red fruits and white flowers, enhanced by delicate pastry-like nuances and an undertone reminiscent of the area’s limestone soils. On the palate, it is fresh and vibrant, supported by a well-defined acidity and a linear progression. The marked minerality integrates elegantly with the fruit and follows through to the finish, leaving a dry, precise, and persistently long sensation.

The fresh and lively profile of this sparkling wine pairs harmoniously with raw fish dishes, sushi, and fresh salads.
