Description
The Côte de Nuits-Villages by Labouré-Roi is a Pinot Noir produced in the communes of Fixin, Brochon, Prémaux-Prissey, Corgoloin, and Comblanchien, in the heart of the Côte de Nuits. This appellation extends over about 200 hectares, with clay-limestone and sandy soils, altitudes between 180 and 280 meters, and varying slopes facing southeast and south.
The grapes are handpicked and carefully selected both in the vineyard and the winery. After de-stemming and crushing, they undergo a cold maceration for 4-6 days at 8-10°C. Alcoholic fermentation takes place with selected Burgundy yeasts, accompanied by daily pump-overs and punch-downs to extract color and tannins. The wine then matures for 10-12 months: partly in French oak barrels and partly in stainless steel, on fine lees.
With an intense purple color, it reveals aromas of wild blackberries, licorice, and fresh figs on the nose. On the palate, it is smooth yet structured, with a rich bouquet of red fruits and a slightly vanilla finish that grants depth and elegance.
It pairs perfectly with poached eggs in red wine sauce, grilled lamb chops, spicy sausages, spicy pizza, roast beef, or warm chicken gizzard salad.
