Description

What kind of wine is it

Chavost's Coteaux Champenois is a red wine resulting from a meticulous blend of Pinot Noir and Pinot Meunier. Classified as Coteaux Champenois, it stands out for a technical approach aimed at fruit purity. The winemaking process and lack of filtration define a structured yet smooth style, characterized by soft tannins and a dynamic flavor profile.

Origin

The Pinot Noir and Pinot Meunier grapes are harvested in the surroundings of the village of Chavot-Courcourt, in the Vallée de la Marne. The agricultural setting is defined by a chalky terroir, a determining factor that ensures precision and supports regular ripening of the grapes. The production is overseen by Chavost, a company that interprets the peculiarities of this area and offers a red expression with a strong sense of identity.

How it is made

Vinification takes place in oak barrels and follows a natural process that enhances the blend. After initial fermentation, the wine matures for about 18 months still in wood, a fundamental phase to integrate its structure and develop subtle spicy notes. The decision not to filter the wine before bottling allows its original characteristics to be preserved, faithfully reflecting the character of the land.

Tasting notes

In the glass, it displays an intense ruby red color, an indicator of good concentration. On the nose, it reveals complex aromas of ripe red fruits, accompanied by delicate spices and a measured hint of wood due to barrel-aging. The palate is balanced, supported by soft tannins that guide the drink toward a clean finish with excellent persistence.

Food pairings

This red pairs effectively with charcuterie boards and cheeses, where its well-integrated tannic structure balances the richness and savoriness without weighing down the palate. It is also an excellent choice with legume soups, which enhance the wine’s flavor continuity. It best accompanies simple and flavorsome dishes and demonstrates solid flexibility at the table.

When to serve

This label is ideal when seeking a regional tasting experience, perfect for a rustic dinner with authentic flavors. Thanks to its 18 months of wood aging, it is enjoyable from the moment of opening and maintains a well-defined, orderly sensory profile. It can be chosen for occasions when a clean and persistent finish is desired, providing continuity throughout the meal.
