Côtes de Provence Rouge XIIIe from Château Peyrassol is a certified organic red wine in conversion, made from a blend of Syrah, Cabernet Sauvignon and Grenache. It ferments and ages in concrete vats, where attentive cellar work shapes its structural and aromatic profile. The style is full and ripe, characterized by velvety tannins and a spicy, fruity character, always supported by a well-balanced acidity.
Where it comes from
The grapes come from the inland valleys of the Côtes de Provence appellation, where vineyards grow on clay and limestone soils. Some plots benefit from a northern exposure on deep soils, maintaining an excellent balance between ripeness and acidity. The farming practice includes sowing cereals between the rows to promote soil vitality during the organic transition. This terroir imparts pronounced fruity intensity to the wine, silky tannins, and a distinct spicy note.
How it is produced
The harvest involves careful selection both in the vineyard and on the sorting table. The grapes are destemmed but not crushed and are moved by gravity into concrete vats. Maceration lasts three weeks with alternating cap submersion, a technique that allows gradual extraction of color and tannins. Then, a gentle racking clarifies the must, retaining only the best lees. These are worked with care to broaden aromatic expression and enhance the wine’s aging potential.
Tasting notes
In the glass, it shows a violet color with intense purple highlights. On the nose, notes of licorice, pepper, peony, and typical ripe Syrah aromas emerge, followed by fragrant red and black fruits. The palate is soft, supported by velvety tannins and balanced freshness. Blackberry and spice reappear in the flavor, which then opens up into a round and notably meaty finish.
Food pairings
The aromatic structure and tannic texture of this red make it an excellent partner for a homemade terrine served alongside a rich assortment of cured meats. It also achieves a wonderful harmony with beef carpaccio with sucrines and capers, where the wine’s acidity gently complements the raw vegetables and meat. Lastly, the fruity and spicy character of the sip harmonizes beautifully with the sweet-and-sour notes of a veal sauté with apricots.
When to serve it
This label is perfect to accompany hearty dishes where a wine with a mature profile and distinct spice is sought. Thanks to the special winemaking with extended lees contact, it has excellent aging potential and is well suited to prolonged bottle aging.
