Description

The Fixin by Labouré-Roi originates in the northernmost village of the Côte de Nuits, near Marsannay. The vineyards extend between 270 and 360 meters of altitude on gentle slopes facing east and southeast. This wine is produced exclusively from Pinot Noir grapes harvested by hand. The soils are limestone with traces of marl, ideal for producing structured and long-lived Pinot Noir.

The vinification follows a traditional approach, aimed at enhancing the territorial expression: fermentation in vats at controlled temperature with prolonged maceration, followed by aging in wood for an appropriate period, which helps develop complexity and depth.

The wine displays an intense red color. The nose offers refined notes of spices and black cherries, while the palate reveals balance, structure, and an aromatic persistence that combines power and finesse, making it suitable for aging.

Ideal with braised pork, entrecôte with parsley, even spiced poultry stews, or creative dishes like paella, tapas, and spring rolls; it also pairs well with cheeses such as Chaource, Comté, and Époisses.
