Description
The Franciacorta Brut of the Pavò winery is a sort of business card with which the corporate style presents itself. We are precisely in Iseo, in the province of Brescia, within one of the most renowned Italian areas for the production of the Classic Method.
It is made up of 90% Chardonnay and 10% Pinot Noir. The alcoholic fermentation of the must takes place partly in steel and partly in barrique. The malolactic fermentation starts spontaneously before aging in steel for 5 months and in wood for another 6. Bottled with the fermentation yeasts, resting in the presence of them for a period of at least 30 months.
Its color is straw yellow, with a fine and persistent perlage. The nose reveals pungent features of gooseberry and citrus, against a background that spreads over a sweeter fruit and pastry. In the mouth it is fine, fresh and savory, with a long persistence of the yeast.
Perfect to accompany a summer aperitif.
