Gevrey-Chambertin Les Evocelles by Domaine de la Vougeraie is a red wine made from Pinot Noir that embodies the characteristics of the namesake Burgundy appellation. It is produced from grapes grown according to strict organic farming principles, consistently applied since 2001. The result is a wine with a structured and elegant profile, featuring exceptionally pure fruit, a fine tannic structure, and well-defined freshness. Every step of winemaking is designed to enhance the grapes’ qualities, preparing the palate for a deep and clear expression of its origin.

Where does it come from

The grapes come from the specific Les Evocelles parcel, spanning about three hectares and characterized by vines of varying ages. The soil lies on a limestone matrix, enriched at the surface by a balanced mix of clay and silt. This particular geological composition adds structure and pronounced precision to the wine’s flavour. The location on a sloping hillside with southeast exposure ensures excellent sunlight, allowing for optimal and even ripening in the entire organic vineyard.

How is it made

The process begins with a five-day period of cold maceration, designed to delicately extract the wine’s noble components. This is followed by a seventeen-day fermentation without added yeast or enzymes, which preserves the grape’s varietal and territorial essence. Ageing takes place for fifteen months in wooden barrels, part of them new, using oak selected from the nearby Cîteaux forest. A final month in stainless steel tanks allows the wine to stabilize naturally before it’s bottled.

Tasting notes

In the glass it displays a ruby red colour, introducing a complex bouquet full of nuance. The nose combines intense fruity notes of blackberry and cherry with deep earthy hints, accompanied by the signature delicate spiciness of Gevrey-Chambertin. On the palate, it shows a harmonious and lively entry, supported by well-measured tannins and vibrant acidity that give verve to the sip. The finish is clean and balanced, leaving a clear return of the dark fruits perceived on the nose, together with a pleasant spicy finish.
