What kind of wine is it

Donnaluce by Poggio alle Volpi is a structured white wine made from late-harvested grapes. Crafted from a precise blend of Malvasia del Lazio, Greco and Chardonnay, it shows a clear identity. Fermentation at low temperature preserves a crisp aromatic profile and ensures precise balance on the palate. Aging on the lees, carried out between stainless steel and wooden barrels, gives this wine a fresh, saline and pleasantly supple style, with a distinct mineral signature.

Where it comes from

This white comes to life in estate vineyards located in the municipality of Monteporzio Catone. The vines sink their roots into volcanic soils, a geological matrix particularly rich in natural trace elements. This specific soil composition is directly reflected in the glass and offers the wine clear mineral sensations and a distinctive salinity. Its location within Lazio enhances its local identity, defining a Mediterranean-styled white that unites roundness and verve.

How it's made

The production process begins with a late harvest, followed by a gentle pressing of the bunches to extract the must delicately. Fermentation takes place at low temperatures, an essential condition to maintain fermentative cleanliness and protect primary aromas. Afterwards, the wine matures through lees aging that adds volume to the structure. This phase is carried out by splitting the wine between stainless-steel tanks and wooden barrels of different origins, a union of linearity and evolution.

Tasting notes

In the glass it shows a bright straw-yellow color, marked by a brilliance that anticipates its dynamism. On the nose, it opens with intense fruit notes recalling apricot and white peach, intertwined with hints of lavender and hazelnut over a clear mineral backdrop. On the palate it is smooth and intriguing, led by a progression that integrates freshness and a saline component. The finish is persistent and slightly almond-tinged, leaving the palate clean.

Food pairings

Its pronounced freshness makes it an ideal choice as an aperitif, easily accompanying selections of finger food. The softness on the sip supports the texture of goat cheeses and makes for a well-judged match. At the table it enhances maritime flavors and pairs well with spaghetti with clams and dishes featuring bottarga.
