What kind of wine it is
Meursault by Jaffelin is a still white wine made from Chardonnay grapes grown in the commune of Meursault, in Burgundy. Its full structure and creamy texture come from ageing in French oak barrels, some of which are new. Freshness and sapidity support its profile, making the wine suitable for both immediate consumption and bottle aging. The palate is harmonious and precise, with good definition and complexity.
Where it comes from
The grapes come from the Les Forge area, west of the village of Meursault. The terroir is known for producing crisp, full-bodied, and persistent whites, which can develop notes of dried fruit as they age.
How it is made
The harvest begins when the balance between sugars and acidity is right. Fermentation takes place entirely in French oak barrels, with a proportion of new wood enhancing aromatic development. Ageing continues for about 11 months on fine lees, with occasional bâtonnage to encourage roundness and stability. This process creates a broad texture and persistent finish, while the profile remains clean and well-defined.
Tasting notes
Intense straw yellow colour with golden highlights. The nose reveals aromas of yellow-fleshed fruit, rhubarb, and subtle hints of sweet spices and toast. On the palate, the wine is ample and harmonious, with a soft entry, rich mid-palate, and lively freshness that supports the volume. The finish is persistent, with hints of toasted almond and a savoury sensation that invites another sip.
Food pairings
This Meursault pairs with shellfish and seafood such as lobster, langoustines, and scallops, its structure and sapidity enhancing their sweetness and oceanic character. The wine also matches white meats and creamy dishes, such as chicken or veal in sauce, and accompanies foie gras thanks to its broad palate. In Burgundian cuisine, it is a good match for poulet de Bresse à la crème, and in French tradition, with pike quenelles in Nantua sauce. Also recommended with mildly aged soft cheeses.
When to serve it
Ideal for a special dinner and equally suited to a seafood lunch thanks to its freshness. The aromatic profile is already expressive in its youth, but the wine also has good aging potential: over time, it develops more complexity and dried fruit notes in the bottle.
