What kind of wine it is
Monthélie Les Toisières by François Mikulski is a red wine made from Pinot Noir grapes grown on clay-limestone soils. It offers an elegant and structured Burgundy style thanks to eighteen months of aging in barrels, part of which are new. Fermentation in stainless steel preserves freshness and aromatic purity of the grape.
Where it comes from
The Les Toisières vineyard is located at the entrance to the village of Monthélie, on a south-west facing slope. Once a stone quarry, today the clay-limestone soil lends a distinctive mineral profile, a characteristic trait of the Monthélie area.
How it is produced
Alcoholic fermentation takes place in stainless steel tanks for about fifteen days. The wine then ages for eighteen months in barrels, a portion of which are new, enhancing complexity and body.
Tasting notes
It shows a bright ruby color. On the nose, scents of red fruits and floral notes emerge, with subtle spicy hints. The palate offers fine tannins, good acidity and a savory finish, with balance and varietal purity that highlight the minerality of the terroir.
Pairings
Pairs well with roasted white meats and medium-aged soft cheeses. In Italian tradition, it matches with porcini mushroom risotto and balances the richness of the dish with its freshness.
