Ontario VQA Baco Noir 2018 Henry of Pelham

The Baco Noir of the Henry of Pelham winery is a Canadian wine produced with Baco Noir grapes and falling under the VQA Ontario appellation.

The variety ensures early budding which, also thanks to predominantly clayey soils, guarantees a long growing season and correct ripening. Made with proprietary grapes, the wine ferments in steel with complete maceration in contact with the skins before refining for at least 8 months in 24% new American oak barrels.

Ruby red of great intensity, it has currants and blueberries on the nose with pleasant spicy and toasted hints. On the palate it is harmonious and soft combining the fullness of red fruits with notes of vanilla and sweet spices, with hints of bitter cocoa and coffee powder. The silky tannins and the excellent structure anticipate a long finish.

Recommended with all courses cooked on the barbecue but interesting to combine with aged cheeses and stewed meats accompanied by blueberry and pepper compote.
